Steeping Time for Dr. Lee’s TeaForHealth® Green Tea Why do most tea experts advise steeping green tea for no more than 3 minutes and Dr. Lee’s TeaForHealth needs 15 to 20 minutes of steeping time? In 13th century China, a process was developed where antioxidants are mechanically released from the retaining vacuoles within the tea leaves through crushing, rolling, or rubbing before drying for storage and distribution. When properly processed, the epidermis of the leaf is left intact, protecting the antioxidants from moisture and oxidation. All high-grade green teas, like Dr. Lee’s TeaForHealth, have been processed in this way, and therefore need 15-20 minutes of steeping time to rehydrate the leaf and draw the catechin antioxidants out through the intact layers of epidermis.
Conversely, most green teas sold today have been aggressively crushed and chopped, damaging the epidermis and forcing tea catechins to the surface of the leaf to be prematurely oxidized and diminishing their beneficial antioxidant properties. In this state, tea polyphenols become bitter and dissolve quickly into hot liquid, so steeping times longer than 3 minutes are not recommended.
