In modern medical research, the scientists found that the green tea for the laboratory mice must be prepared in distilled water under nitrogen in an Erlenmeyer glass flask to prevent oxidation. Only under these brewing conditions, the beneficial effects of green tea can be reproduced in animal experiments. The ancient Chinese scientists learned all these through human observations. They invented in the Tang dynasty porcelain, a non-metallic material, to make tea sets, which we now call “chinaware”. In the Ming dynasty, they also invented a tea-brewing bowl called Zhong with a sinking lid to exclude the atmospheric air to make tea. The Taoist herbalists used to save the melted snow, rain water and the morning dew water collected from the lotus leaves to make tea.
